Traditional Lasagna with Spinach

There are some dishes that you just have to learn, to be able to call yourself a 'cook'. Lasagna is one such dish which we just had to make at least once. There is of course a reason why such dishes are so popular and on every aspiring (master?)chefs wishlist - They evoke the word - yummm. And so was our experience with making this traditional recipe infused with spinach. See below for a super simplified recipe 
Lasagna sheets (we used home-made ones)
Ricotta Cheese
Cottage Cheese
Spinach - 1 bunch (blanched)
1 Egg
Parmesan Cheese 
Mozzarella Cheese
1 Bowl of Arrabiata Sauce / Vegetable Tomato Sauce
1. Boil Lasagna Sheets, and after boiling cool them in an iced water dish (this helps to immediately stop the cooking process and keep the sheets soft)
2. Mix - Ricotta , Cottage, Parmesan Cheese, and egg..whip well.

1. Put a spoon of red sauce in the large baking dish
2. Spread the cooled down lasagna sheet on the red sauce in the dish
3. Repeat step 1 and then add the blanched spinach leaves on top of it
3.  Spread cheese mix over Lasagna sheets.
4. Add a layer of Mozzarella cheese on top of it.

5. Repeat step 1 to 4 again.

6. Top it with Red Sauce and Garnish it with Parmesan and Mozzarella Cheese
1. Cover the dish with silver-foil and bake for 20 Mins at 200 degrees
2. Remove the foil and Bake for another 10 Mins at same temp.
Serve Hot with a Glass of Jacob's Creek and Enjoy!
