Mediterranean Baked Pasta

There are always a few dishes that you keep going back to. Some dishes lend them to experimentation and being created across multiple cuisines. From aloo tikki burger to chicken tikka pizza, it is all feasible. Pasta is another such dish which can be cooked in multiple variations. Here, we are not talking about just the red and the white sauces, but a completely different, Mediterranean twist.
This twist will make your pasta healthy plus a complete hearty meal. Do try!

1 cup boiled pasta
3 tomatoes chopped
2 onion finely sliced
3-4 cloves of garlic
1/2 cup boiled chick peas
5 - 8 fresh basil leaves
Mozrella cheese
Black pepper
Chilli flakes
Olive oil
Optional - Salami or sausage pieces


1. In a baking dish, line up garlic, onion, tomatoes and basil leaves. spray some olive oil and bake in oven on high till vegetables are nicely roasted.

2. In a bowl, mix boiled pasta, boiled chick peas and roasted vegetables. Add oregano, black pepper, salt and chilli flakes as per taste.

3. Cover the bowl with grated cheese and bake for approx 10 mins till cheese turns golden brown. - do this step just before serving.

Enjoy this with a glass of chilled lemon ice tea
