Mango Cheesecake in a Jar

It is the summer time - that time of the year when everyone is cribbing about the energy-sapping heat in the country but we are happy gorging on bountiful fruits - watermelon, litchie and of course the kind of them all - Mangoes!! And no better way to enjoy Mangoes than to make it into a dessert and share with everyone. Make this deliciously creamy mango cake in a jar. If you don't have such jars at home, just make it in some fancy glasses and it would go as well.

Ingredients (to serve 6-8)

3 medium size ripe Mangoes
200 gms cream cheese
1 cup heavy whipping cream
3/4 cup icing sugar
1 pack of digestive biscuits 
1 tsp brown sugar
25 gms unsalted butter
250 gms sponge cake
1/2 cup toasted almond flakes
2 tsp vanilla essence


1. Grind Mango pulp to get smooth puree and keep it in a bowl. Adjust the sweetness with sugar (to taste) if the mangoes are not sweet

2. Grind Digestive biscuit and 1 tsp brown sugar into coarse powder. Melt butter and mix it well in biscuit.

3. In a big bowl, whip cream till you get peaks (easier to get whipped cream if that is available)

4. In a separate bowl, mix  cream cheese, sugar and vanilla essence well.

5. Now, transfer whipped cream to cream cheese mix and stir well to achieve uniform consistency.

6. Roughly break cake in small pieces.

Now to assemble

1. Put biscuit powder at bottom of jar and smoothen it. We used melon scooper to set it. Make a layer of 5 - 8 mm thickness.

2. Add a layer of cream cheese mix

3. Top it with Mango Puree

4. Put a layer of cake (1 - 1.5 cm thick)

5. Generously pour Mango puree

6. Top it with cream cheese mix

Garnish with toasted almonds and keep it in refrigerator for atleast 2 hours.

Serve chilled and see it disappear quickly.
