Egg Curry

This the comfort food that we have grown up on. Not that this was a dish that was made regularly at home but it has ample dozes of nostalgia associated with it. Dishes like these were basic but special nonetheless. See here for the simple recipe.



Ingredients (Serves 2-3)

6 hard boiled eggs
2 onions - finely chopped / sliced
3 tomatoes - pureed
3 Bay leaves
2 cloves (optional)
1/2 tsp cumin
1 tsp chicken curry masala
1/2 tsp garam masala
1/4 tsp turmeric powder
1/2 tsp degi mirch
1/2 tsp coriander powder
salt

Method

1. In a pan, heat oil and let cumin sputter. Add onion to it and cook till golden brown.

2. Add pureed tomatoes to it and let it cook till oil begins to separate.

3. Add all spices and cook for another 3-4 mins.

4. Now pour water as per desired consistency and let it boil.

5. Peel eggs and use knife to make cuts on egg and then drop them in curry. Let it simmer for another 4-5 mins.

Garnish with coriander and serve hot with homemade lachha parantha.
